Step 1
Preheat oven to 180°C (350°F). Generously butter a 9-inch pie dish or shallow baking dish. Pit the cherries (optional, traditional clafoutis keeps pits for almond flavor).

In a large bowl, whisk eggs and granulated sugar until light and fluffy. Gradually whisk in the flour until just combined, avoiding overmixing.

Slowly whisk in the milk, vanilla extract, and salt until the batter is smooth.

Arrange the pitted cherries evenly in the bottom of the prepared baking dish. Pour the batter gently over the cherries.

Bake for 40-50 minutes, or until the clafoutis is golden brown, puffed, and set in the center. A knife inserted should come out clean.
