Step 1
Bring a pot of water to a boil and soft boil the eggs for 6 minutes, then transfer to ice water.
Step 2
In a separate pot, heat broth over medium heat and whisk in miso paste until fully dissolved.

Add soy sauce and sesame oil to the broth, then add sliced carrots and corn; simmer for 10 minutes.
Step 4
Cook ramen noodles according to package instructions, then drain and set aside.
Step 5
Add spinach to the broth during the last minute of cooking.
Step 6
Divide noodles among bowls and pour broth with vegetables over them.
Step 7
Peel eggs, cut in half, and place on top of ramen; garnish with sliced green onions and nori.
