Step 1
Slice beef against the grain into thin strips. Marinate beef with soy sauce, 1 tbsp cornstarch, and baking soda (if using) for at least 15 minutes.
Step 2
Whisk together beef broth, oyster sauce, soy sauce, brown sugar, and 1 tbsp cornstarch for the sauce. Mince garlic and ginger.
Step 3
Blanch broccoli florets in boiling water for 2-3 minutes until bright green and tender-crisp. Drain and set aside.
Step 4
Heat 1 tbsp vegetable oil in a large wok or skillet over high heat until smoking. Add beef in a single layer and stir-fry for 2-3 minutes until browned. Remove beef and set aside.
Step 5
Add remaining 1 tbsp vegetable oil to the wok. Add minced garlic and ginger, stir-fry for 30 seconds until fragrant.
Step 6
Return beef to the wok. Add blanched broccoli. Pour in the prepared sauce, stirring constantly, and cook until the sauce thickens and coats the beef and broccoli.
Step 7
Stir in sesame oil. Taste and adjust seasoning if needed. Serve immediately with steamed rice.
