In a bowl, combine grated ginger, soy sauce, mirin, sake, and sugar to make the shogayaki sauce. Mix well.

Lightly pat the thinly sliced pork dry. If slices are very large, cut them into manageable, bite-sized pieces.

Heat vegetable oil in a large skillet over medium-high heat. Add the pork in a single layer and cook for 2-3 minutes per side until lightly browned.

Pour the shogayaki sauce over the cooked pork. Bring to a simmer and cook, stirring, until the sauce thickens and coats the pork well, about 2-3 minutes.
