Tear pita bread into bite-sized pieces. Heat vegetable oil in a skillet and fry pita pieces until golden and crispy. Alternatively, bake or air fry until crisp. Drain on paper towels.
Step 2

Step 3
Prepare the yogurt sauce: In a bowl, whisk together plain yogurt, minced garlic, lemon juice, and salt until smooth.
Step 4
Prepare the garnish: In a small skillet, melt butter over medium heat. Add pine nuts and cook, stirring frequently, until golden brown. Be careful, they brown quickly! Remove from heat and stir in paprika if using.
Step 5
Assemble fatteh: In a serving dish, spread a layer of the crispy pita pieces. Spoon the warm chickpeas evenly over the pita.
Step 6
Pour the garlicky yogurt sauce over the chickpeas, spreading it to cover. Don't stir, keep the layers distinct.
Step 7
Drizzle the hot butter and pine nut mixture over the yogurt. Garnish generously with fresh chopped parsley.
Step 8
Serve immediately to enjoy the contrast of warm, cool, and crispy textures.
