Step 1
Heat olive oil in a pot over medium heat. Add chopped onions and minced garlic, and sauté until the onions are translucent, about 5 minutes.

Add chopped tomatoes and cook for another 5 minutes.

Pour in the vegetable broth, salt, and pepper. Bring to a boil, then reduce the heat and let simmer for 20 minutes.
Step 4
Use an immersion blender to blend the soup until smooth. Alternatively, transfer to a blender and blend, then return to the pot.
Step 5
Add fresh basil leaves, simmer for an additional 5 minutes, and then serve hot.
