Step 1
Peel the very ripe plantains and cut them into bite-sized cubes or diagonal slices.

In a bowl, combine the grated ginger, finely chopped red onion, minced scotch bonnet pepper, and salt. Mix well to create the seasoning paste.

Add the plantain pieces to the seasoning paste and toss thoroughly to ensure all pieces are evenly coated. Let marinate for at least 15 minutes to absorb flavors.

Heat vegetable oil in a deep pot or skillet over medium-high heat until hot (around 350°F / 175°C).
