Step 1
In a medium bowl, combine drained tuna, mayonnaise, celery, red onion (if using), Dijon mustard, salt, and pepper. Mix well to create tuna salad.
Step 2
Lightly butter one side of each slice of bread.
Step 3
Place two slices of bread, butter-side down, in a skillet over medium heat. Evenly spread half of the tuna salad on each slice.
Step 4
Top the tuna salad with cheddar cheese slices or shredded cheese.
Step 5
Top with the remaining bread slices, butter-side up. Cook for 3-5 minutes per side, until golden brown and cheese is melted and bubbly.
Step 6
Remove from skillet, slice in half, and serve hot.
