Step 1
For the chimichurri: finely chop fresh parsley, cilantro, and garlic. In a bowl, combine with red wine vinegar, olive oil, red pepper flakes, salt, and pepper. Let sit for at least 15 minutes to allow flavors to meld.

In a large bowl, gently mix ground lamb with 2-3 tbsp of the prepared chimichurri. Form into 4 equal patties.

Preheat grill or grill pan to medium-high heat. Grill lamb burgers for 4-6 minutes per side, or until desired doneness is reached (internal temperature of 160°F/71°C for medium).
Step 4
Lightly toast burger buns on the grill or in a toaster.

Slice tomato and red onion. Crumble feta cheese.
Step 6
Assemble burgers: place a grilled lamb patty on a toasted bun. Top generously with crumbled feta cheese, sliced tomato, red onion, and extra chimichurri sauce.
