Step 1
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Step 2
In a medium bowl, beat together softened cream cheese, granulated sugar, vanilla extract, and egg yolk until smooth and creamy. This is your cream cheese filling.
Step 3
Unroll the puff pastry sheet on the prepared baking sheet. Cut it into 6 equal rectangles.
Step 4
Score a border about 1/2 inch from the edge of each rectangle with a knife, being careful not to cut all the way through.

Spoon an equal amount of the cream cheese filling into the center of each pastry rectangle, spreading it within the scored border.

Arrange fresh mixed berries on top of the cream cheese filling on each Danish.

Brush the exposed pastry edges with the egg wash.

Bake for 15-18 minutes, or until the pastry is golden brown and puffed, and the filling is set. Let cool slightly on a wire rack.
