Step 1
Break the fermented cassava paste into small lumps. Place them in a large, sturdy pot.

Gradually add water to the cassava paste while mixing with a strong wooden spoon or spatula, ensuring it becomes a soft, uniform paste.

Place the pot over medium heat. Begin stirring and pounding the mixture continuously. It will start to thicken and form a dough.

Continue to stir and knead the akpu vigorously against the sides of the pot for 10-15 minutes, until it becomes completely smooth, pliable, and consistent in texture, without any raw taste.

If it becomes too stiff, add a small splash of hot water and continue to knead until the desired smooth and soft consistency is achieved.

Cover the pot and let the akpu steam on very low heat for 5 minutes.
