Step 1
Rinse the dried sorrel sepals under cold water.
Step 2
In a large pot, combine the rinsed sorrel, sliced ginger, whole cloves, cinnamon stick, and water. Bring to a boil.
Step 3
Once boiling, reduce heat to low, cover, and simmer for 5-10 minutes. Then remove from heat and let steep for at least 4 hours, or preferably overnight, to allow flavors to fully develop.
Step 4
Strain the liquid through a fine-mesh sieve into a clean pitcher or container, discarding the solids. Stir in the granulated sugar and lime juice until the sugar is fully dissolved.
Step 5
Taste and adjust sweetness if desired. Chill thoroughly before serving. Serve over ice, optionally with a slice of lime.
