Step 1
Finely grate the onion and garlic into a large mixing bowl. Squeeze out any excess liquid from the grated onion.
Step 2
Add ground lamb, chopped parsley, 2 tbsp chopped mint, cumin, coriander, smoked paprika, salt, and pepper to the bowl with the onion and garlic. Mix thoroughly with your hands until well combined but do not overmix.
Step 3
Divide the lamb mixture into 8 equal portions. Form each portion around a metal skewer (if using) or shape into small logs. Chill for 15 minutes to help them hold shape.
Step 4
Preheat grill to medium-high heat or oven to 400°F (200°C). If grilling, lightly oil the grates. If baking, place kofta on a lightly greased baking sheet.
Step 5
Cook the kofta: Grill for 3-4 minutes per side until nicely browned and cooked through (internal temperature 160°F/71°C). If baking, bake for 15-20 minutes, flipping halfway, until cooked through.
Step 6
While kofta cooks, prepare the mint yogurt sauce: In a small bowl, combine Greek yogurt, grated cucumber, 2 tbsp chopped mint, minced garlic, lemon juice, and a pinch of salt. Stir well.
Step 7
Serve the hot kofta skewers with the cooling mint yogurt sauce on the side, perhaps with a simple salad or pita bread.
