Step 1
Defrost the frozen peas and carrots by microwaving or placing them in hot water briefly and draining.
Step 2
In a small bowl, mix the soy sauce, rice vinegar, sesame oil, cornstarch, and water to create the sauce.
Step 3
Heat vegetable oil in a large pan over medium-high heat. Add the minced garlic and ginger and stir-fry for 1 minute until fragrant.
Step 4
Add the ground beef to the pan, breaking it up with a spatula, and cook until browned, about 6-8 minutes.
Step 5
Add the peas, carrots, and red bell pepper to the beef. Stir-fry for about 8 minutes until vegetables are warm and tender.
Step 6
Push the beef and vegetables to one side of the pan, and crack the eggs into the open side. Scramble the eggs into the mixture and cook until set.
Step 7
Pour the prepared sauce over the beef, vegetables, and eggs. Stir well to combine and cook for another 3-4 minutes until the sauce thickens.
Step 8
Garnish with chopped green onions and sesame seeds. Serve hot or divide into meal prep containers for later.
