Step 1
Combine rice and cinnamon stick in a large bowl. Cover with 2 cups of water and let soak at room temperature for at least 4 hours, or preferably overnight.
Step 2
Transfer the rice, cinnamon stick, and soaking water to a blender. Add the remaining 2 cups of fresh water. Blend on high until the mixture is as smooth as possible, about 2-3 minutes.
Step 3
Strain the horchata mixture through a fine-mesh sieve or cheesecloth-lined strainer into a clean pitcher, pressing on the solids to extract all liquid.
Step 4
Stir in condensed milk and vanilla extract. Taste and adjust sweetness if desired.
Step 5
Chill the horchata in the refrigerator for at least 1 hour before serving. Stir well before pouring.
Step 6
Serve over ice, optionally with a sprinkle of ground cinnamon.
