Step 1
Rinse the dried hibiscus flowers thoroughly to remove any dust or debris.

In a large pot, combine the rinsed hibiscus flowers with 8 cups of water. Add fresh mint leaves and ginger slices if using.

Bring the mixture to a boil over medium-high heat. Once boiling, reduce heat to low, cover, and simmer for 15-20 minutes, allowing the flavors to infuse and the color to deepen.

Remove the pot from heat and let it cool completely. This allows for maximum flavor extraction.

Strain the liquid through a fine-mesh sieve into a clean pitcher or container, pressing on the solids to extract all liquid. Discard the solids.

Add sugar to the strained juice, stirring until it completely dissolves. Add vanilla extract if desired. Taste and adjust sweetness to your preference.

Chill the bissap juice thoroughly in the refrigerator before serving. Serve over ice.
