Step 1
In a shallow dish, whisk together 1.5 cups flour, garlic powder, onion powder, cayenne pepper, 1 tsp salt, and 1 tsp black pepper. In another shallow dish, whisk eggs and 0.5 cup milk.
Step 2
Dredge each cube steak in the flour mixture, then dip in egg wash, then dredge again in flour, pressing to ensure a thick coating.
Step 3
Heat vegetable oil in a large heavy-bottomed skillet over medium-high heat to 350°F (175°C). Fry steaks two at a time for 3-5 minutes per side, until golden brown and cooked through.
Step 4
Remove steaks to a wire rack. Pour off all but 2 tbsp of the pan drippings from the skillet.
Step 5
For the gravy: Return skillet to medium heat. Whisk 1/4 cup flour into the reserved drippings. Cook for 1 minute to form a roux.
Step 6
Gradually whisk in 2 cups milk. Bring to a simmer, stirring constantly, until gravy thickens. Season with salt and plenty of black pepper.
Step 7
Serve the chicken fried steak immediately, smothered with hot country gravy.
