Step 1
Place gari in a bowl. Sprinkle with salt and gradually add water, mixing until the gari is hydrated and slightly softened, but not mushy. Set aside.
Step 2
Chop onion and tomato. If using corned beef, break it up. If using sardines, flake them.
Step 3
Heat vegetable oil in a pan over medium heat. Sauté chopped onion until translucent. Add chopped tomato and cook for 3-5 minutes until softened.
Step 4
Add corned beef or sardines to the pan, breaking it up and mixing with the vegetables. Cook for 2-3 minutes.
Step 5
Add the hydrated gari to the pan. Stir well to combine with the vegetables and meat. Cook for 2-3 minutes.
Step 6
Whisk eggs with a pinch of salt and pepper. Pour over the gari mixture in the pan. Gently scramble until eggs are cooked through and evenly distributed.
Step 7
Taste and adjust seasoning. Serve hot, often with fried plantains.
