Step 1
Pat veal shanks dry and season with salt and pepper, then dredge in flour
Step 2
Heat olive oil in large braising pot over medium-high heat
Step 3
Brown veal shanks on all sides, about 3 minutes per side, then set aside
Step 4
Dice carrots, celery, and onion, then sauté in same pot until softened
Step 5
Stir in tomato paste and cook for 1 minute
Step 6
Deglaze with white wine and scrape up browned bits from pot
Step 7
Return shanks to pot and add beef broth, cover and simmer for 2 hours
Step 8
Mince garlic and parsley with lemon zest to create gremolata
Step 9
Serve shanks with sauce spooned over top and gremolata sprinkled on each portion
