Step 1
Cook rice noodles according to package instructions, then drain and set aside.
Step 2
Press tofu to remove excess moisture, then cut into cubes.
Step 3
Heat oil in a large pan and fry tofu until golden brown, around 8 minutes.
Step 4
Push tofu to the side and scramble the egg in the pan.
Step 5
Add cooked noodles, bean sprouts, soy sauce, and lime juice; toss everything together for 2-3 minutes.
Step 6
Top with sliced green onions, chopped peanuts, and fresh coriander before serving.
