Step 1
Cook vermicelli noodles according to package directions. Drain and rinse with cold water; set aside.
Step 2
Prepare all fillings: slice cooked shrimp in half lengthwise, thinly slice cooked pork, wash and dry lettuce and herbs, julienne cucumber.
Step 3
Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for 15-20 seconds until softened but still firm.
Step 4
Lay the softened wrapper flat on a clean surface. Place 2-3 shrimp halves (cut side up) and a few slices of pork about 1 inch from the bottom edge.
Step 5
Top with a piece of lettuce, a small amount of vermicelli, cucumber, and a few sprigs of cilantro and mint.
Step 6
Fold the bottom edge over the filling, then fold in the sides. Roll tightly from the bottom up. Repeat with remaining ingredients.
Step 7
Serve immediately with peanut dipping sauce.
