Step 1
In a large bowl, combine ground meat, finely diced tomato, onion, chopped parsley, minced garlic, cumin, paprika, allspice, red pepper flakes (if using), salt, and black pepper. Mix thoroughly until well combined.
Step 2
Cut each large pita bread in half to create two pockets. Evenly spread a thin layer of the seasoned meat mixture inside each pita pocket.

Lightly brush the outside of the stuffed pitas with olive oil.

Preheat a grill or a cast-iron skillet to medium heat.

Place the arayes on the grill or in the skillet. Cook for 5-7 minutes per side, pressing down occasionally, until the pita is golden and crispy, and the meat inside is cooked through (internal temperature 160°F / 71°C).
Step 6
Remove from heat. Cut each stuffed pita into smaller wedges or strips for serving.

Serve hot, optionally with a side of yogurt dip or fresh salad.
