Step 1
Char the onion and ginger on a hot grill or skillet until golden.
Step 2
In a large pot, add beef bones and water. Bring to a boil and simmer for 15 minutes.
Step 3
Add charred onion, ginger, star anise, and cinnamon to the pot. Simmer for 1 hour.
Step 4
Strain the broth and return to the pot. Add fish sauce and sliced beef.
Step 5
Cook rice noodles according to package instructions and prepare toppings.
Step 6
Serve broth hot over noodles and garnish with fresh basil, lime, bean sprouts, and jalapeño.
