Step 1
In a bowl, mix the salt reduced soy sauce, low sugar ketchup, honey, diced garlic, sesame oil, and rice vinegar.
Step 2
Add the chicken thighs to a slow cooker along with the sauce and mix well.
Step 3
Cook the chicken in the slow cooker according to settings.
Step 4
In a lined baking dish, add cooked white rice, soy sauce, sesame oil, and flatten the rice.
Step 5
Boil on high until the top is crispy.
Step 6
In another lined tray, add whisked eggs and egg whites and bake in the oven.
Step 7
Add diced onion and frozen mixed vegetables to the fried rice and cook on high.
Step 8
Mix cornstarch with water and add to the chicken to thicken.
Step 9
Once the chicken is cooked, break it apart and add to the fried rice.
Step 10
Scramble the eggs in the other tray and add to the mixture along with diced spring onions.
Step 11
Mix everything in the slow cooker and distribute into 8 servings.
Step 12
Top with white sesame seeds, more spring onions, and a drizzle of Sriracha mayonnaise.

Store in the fridge or freezer and reheat when ready to eat.
