Step 1
Mix teff flour, all-purpose flour, water, and salt until a batter forms. Let it ferment overnight.
Step 2
In a pot, heat oil and sauté diced onion and garlic until soft.
Step 3
Add chopped tomato and berbere spice, cooking for an additional 5 minutes.
Step 4
Stir in lentils and water, then simmer until lentils are cooked and the stew thickens, about 25 minutes.
Step 5
Pour batter onto a non-stick skillet to form injera and cook until bubbles form, about 2-3 minutes per side.
