Step 1
In a bowl, gently mix the ground beef with salt, black pepper, and garlic powder. Form into a single patty, slightly wider than your lettuce leaves, and make a small indentation in the center to prevent bulging.
Step 2
Heat the olive oil in a skillet over medium-high heat. Once hot, add the patty and cook for 3-5 minutes per side for medium-rare, or until desired doneness. In the last minute of cooking, place the dairy-free cheese slice on top of the patty, cover the skillet, and allow it to melt.
Step 3
While the patty cooks, prepare your lettuce bun and toppings. Wash and dry the large lettuce leaves. Slice the tomato and red onion.
Step 4
Assemble your cheeseburger: place one large lettuce leaf on a plate, add the cooked patty with melted cheese, then layer with tomato, red onion, and pickle slices. Drizzle with sugar-free ketchup, mustard, and dairy-free mayonnaise. Top with the second lettuce leaf to form your bun. Serve immediately.
