Step 1
Rinse rice until water runs clear; drain and let sit for 30 minutes. Rehydrate shiitake mushrooms, then slice.
Step 2
Prepare all vegetables and chicken by dicing. Drain and rinse konnyaku, then dice.

In a rice cooker or heavy-bottomed pot, combine the rinsed rice, chicken, shiitake, carrot, bamboo shoots, and konnyaku.

In a separate bowl, whisk together dashi stock, soy sauce, mirin, sake, and salt. Pour over the rice and ingredients in the pot.
