Step 1
In a large mortar and pestle, lightly pound garlic and bird's eye chilies until bruised.
Step 2
Add green beans and dried shrimp (if using). Lightly pound a few times to bruise the beans.
Step 3
Add cherry tomatoes and gently bruise them. Do not over-pound.
Step 4
Add fish sauce, lime juice, and palm sugar. Stir well until sugar is dissolved. Taste and adjust for desired sweet, sour, and salty balance.
Step 5
Add shredded green papaya and carrots to the mortar. Using the pestle, gently pound and toss the ingredients, lifting from the bottom to mix well, for 2-3 minutes.
Step 6
Stir in roasted peanuts. Serve immediately.
