Step 1
Peel the ripe plantains and cut them into chunks. Boil the plantain chunks in water for about 10-15 minutes, or until very tender. Drain thoroughly and mash with a fork.
Step 2
In a large bowl, combine the mashed plantains, flour, granulated sugar, baking powder, egg, milk, and vanilla extract. Mix until just combined to form a thick batter.
Step 3
In a deep pot or heavy-bottomed skillet, heat vegetable oil to 350°F (175°C).
Step 4
Drop spoonfuls of the plantain batter into the hot oil, frying in batches. Cook for 2-3 minutes per side, until golden brown and puffed.
Step 5
Remove fritters with a slotted spoon and place on a wire rack lined with paper towels to drain. While still warm, dust generously with cinnamon sugar. Serve immediately.
