Step 1
Bloom gelatin in cold water for 5 minutes
Step 2
Heat heavy cream and milk in saucepan until steaming but not boiling
Step 3
Remove from heat and add bloomed gelatin, stirring until completely dissolved
Step 4
Stir in sugar until dissolved, then add espresso and vanilla extract
Step 5
Strain mixture through fine sieve into bowl
Step 6
Pour into serving glasses and refrigerate for at least 4 hours until set
Step 7
Top with whipped cream and shaved dark chocolate before serving
