Step 1
Rinse lentils thoroughly. In a large pot or Dutch oven, heat olive oil over medium heat.
Step 2
Add diced onion, carrots, and celery. Sauté for 5-7 minutes until softened.
Step 3
Stir in minced garlic, dried thyme, and cook for 1 minute until fragrant.
Step 4
Add rinsed lentils, vegetable broth, diced tomatoes (undrained), and bay leaf. Bring to a boil.
Step 5
Reduce heat to low, cover, and simmer for 30-40 minutes, or until lentils are tender.
Step 6
Remove bay leaf. Stir in fresh spinach and cook until wilted, about 2-3 minutes. Season with salt and pepper to taste.
