Step 1
In a saucepan, combine water, butter, and 1/4 cup sugar. Bring to a boil, then remove from heat. Stir in flour until a dough ball forms.
Step 2
Transfer dough to a mixing bowl. Beat in eggs one at a time, then add vanilla extract, mixing until fully incorporated and smooth.
Step 3
Heat vegetable oil in a deep pot to 350°F (175°C). Prepare a piping bag with a star tip and fill with churro dough.
Step 4
Carefully pipe 4-6 inch strips of dough into the hot oil, using scissors to cut the dough. Fry until golden brown and crispy on all sides.
Step 5
Remove churros with a slotted spoon and drain on paper towels.
Step 6
In a shallow dish, combine 1/2 cup sugar and cinnamon. Roll hot churros in the cinnamon sugar mixture until evenly coated.
Step 7
Serve immediately, optionally with chocolate dipping sauce.
