Step 1
Slice chicken breast and thighs into cubes. Add 2.5 teaspoons salt, 2 teaspoons chili flakes, 3 teaspoons dried parsley, 4 teaspoons Italian herbs, 3 teaspoons paprika, 4 teaspoons garlic powder, 2 cups grated Parmesan cheese, and 6 teaspoons olive oil. Mix until well coated.
Step 2
In a pan on low heat, add 1 tablespoon light butter with 2 teaspoons Italian herbs, 1 teaspoon garlic powder, and 1 teaspoon paprika. Toast for a minute before adding 1.5 cups light evaporated milk and 1.8 cups grated Parmesan cheese. Stir until smooth and creamy.
Step 3
Line a sheet pan with parchment paper, spread marinated chicken evenly (do not overcrowd), add a light layer of avocado cooking spray, then bake in a preheated oven for 20-22 minutes at 200°C (392°F) until crispy.
Step 4
While chicken is still hot, add 0.25 cup extra grated Parmesan cheese and 1 tablespoon fresh parsley. Mix well until coated and extra cheesy.
Step 5
Assemble the wraps with shredded lettuce, chopped onion, chopped tomatoes, crispy chicken, and creamy sauce. Enjoy!
