Step 1
In a large bowl, combine warm water and yeast. Let sit for 5 minutes until foamy.
Step 2
Add sugar and salt to the yeast mixture, stir to dissolve. Then gradually whisk in the cornmeal and all-purpose flour until a smooth batter is formed.

Cover the bowl with plastic wrap or a clean kitchen towel and let the batter rise in a warm place for 1-2 hours, or until doubled in size and bubbly.

Lightly grease small heatproof bowls or ramekins (or use banana leaves if available).

Gently stir down the risen batter. Pour the batter into the prepared molds, filling each about two-thirds full.
Step 6
Arrange the molds in a steamer basket. Place the steamer over a pot of simmering water, ensuring the water does not touch the bottom of the molds. Cover tightly.
Step 7
Steam for 20-30 minutes, or until a toothpick inserted into the center of an ablo comes out clean and they feel firm and spongy.
Step 8
Carefully remove the ablo from the steamer. Let cool slightly before unmolding. Serve warm or at room temperature with stew or sauce.
