Step 1
Whisk eggs with a pinch of salt and pepper.
Step 2
Heat olive oil in a non-stick pan over medium heat. Pour in eggs and scramble until cooked through.
Step 3
In a small bowl, warm the black beans (microwave for 30 seconds or heat in a small pan). Season with a pinch of salt and pepper.
Step 4
Lay the tortilla flat. Spread the scrambled eggs evenly over one half of the tortilla. Top with black beans, shredded cheese, salsa, and cilantro (if using).
Step 5
Fold in the sides of the tortilla, then roll it up tightly from the bottom to form a burrito. You can lightly toast the burrito in a dry pan for a minute on each side if desired.
