Step 1
Place minced chicken in a dry wok or skillet over medium heat. Stir-fry, breaking it up, until cooked through and lightly browned. Drain any excess liquid.
Step 2
Transfer cooked chicken to a mixing bowl. Add thinly sliced red onion, fish sauce, lime juice, and ground dried chilies. Mix well.
Step 3
Stir in spring onion, mint leaves, cilantro, and toasted sticky rice powder. Toss gently to combine all ingredients.
Step 4
Taste and adjust seasoning if needed. Serve immediately at room temperature or slightly warm, traditionally with sticky rice and fresh lettuce leaves for wrapping.
