Step 1
Peel carrots and shred or grate them into thin strips. Place in a large bowl.
Step 2
Segment the oranges: carefully slice off the top and bottom, then remove the peel and pith. Cut between the membranes to release individual segments. Add to the bowl with carrots.

Chop fresh mint and pistachios.
Step 4
For the dressing: In a small bowl, whisk together olive oil, lemon juice, honey, ground cumin, ground coriander, cinnamon, salt, and pepper.

Pour the dressing over the carrots and orange segments. Toss gently to combine, ensuring everything is coated.
Step 6
Stir in most of the chopped mint and pistachios. Serve immediately, garnished with remaining mint and pistachios. Best served chilled after flavors have melded for 15-30 minutes.
