Step 1
Press tofu to remove excess water; cut into cubes.
Step 2
In a pan, heat sesame oil and sauté tofu until golden brown on all sides.

In a pot, bring vegetable broth to a boil; add miso paste, stirring to dissolve.

Add minced garlic, grated ginger, and soy sauce to the broth; simmer for 5 minutes.

Cook ramen noodles according to package instructions; drain and rinse.
Step 6
Add bok choy and sliced carrot to the broth; cook until tender, about 3 minutes.
Step 7
Serve ramen in bowls, topped with tofu and green onions, sprinkled with sesame seeds.
