Step 1
Combine tahini and lemon juice in a food processor. Process for 1 minute until smooth and lightened.
Step 2
Add minced garlic, cumin, and salt to the food processor. Process for another 30 seconds.
Step 3
Add the rinsed chickpeas and roasted red peppers to the food processor. Process until the mixture is mostly smooth.
Step 4
With the food processor running, slowly drizzle in the cold water and olive oil until the hummus is creamy and smooth, scraping down the sides as needed.
Step 5
Taste and adjust seasoning if needed. If too thick, add a little more water.
Step 6
Transfer hummus to a serving bowl, drizzle with a little extra olive oil, and sprinkle with smoked paprika. Serve with pita bread, crackers, or fresh vegetables.
