Step 1
Peel the ripe plantains and cut them into bite-sized cubes or chunks.

Blend fresh ginger, red onion, scotch bonnet pepper, and salt with 1 tablespoon of water into a smooth paste. This is your marinade.

In a bowl, toss the plantain cubes with the ginger-chili marinade, ensuring they are evenly coated. Let it sit for at least 10 minutes (or longer for more flavor).
