Step 1
Preheat your oven to 375°F (190°C).
Step 2
Zest and juice one lemon, and cut the other into wedges.
Step 3
In a small bowl, combine lemon zest, lemon juice, minced garlic, rosemary, thyme, olive oil, salt, and pepper.
Step 4
Pat the chicken dry and rub the herb mixture all over and inside the cavity.
Step 5
Place lemon wedges inside the cavity and truss the chicken legs with kitchen twine.
Step 6
Place the chicken on a roasting pan and roast in the oven for about 1.5 hours, or until the internal temperature reaches 165°F (74°C).
Step 7
Let the chicken rest for 10 minutes before carving and serving.
