Step 1
Season beef with salt and pepper. Heat oil in a large pot or Dutch oven over medium-high heat. Brown the beef on all sides; remove and set aside.

In the same pot, sauté chopped onion, minced garlic, and grated ginger until fragrant, about 5 minutes.

Stir in tomato paste and cook for 2-3 minutes, stirring constantly.

Whisk peanut butter with 1 cup of beef broth until smooth. Add this mixture to the pot, stirring well.
Step 5
Return the beef to the pot. Add the remaining beef broth, carrots, potatoes, sweet potato, bell pepper, and scotch bonnet (if using). Bring to a simmer.
Step 6
Reduce heat to low, cover, and simmer for 60-75 minutes, or until beef is very tender and vegetables are cooked through. Stir occasionally to prevent sticking.
Step 7
Taste and adjust seasoning if needed. Serve hot with rice or couscous.
