Step 1
Cut chicken thighs into 1-inch pieces. In a bowl, combine yogurt, ginger-garlic paste, garam masala, cumin, salt, and pepper. Add chicken and marinate for at least 30 minutes, or up to 2 hours.
Step 2
Cook french fries according to package instructions until crispy. Keep warm.
Step 3
Melt 2 tbsp butter in a large pot or Dutch oven over medium-high heat. Sear marinated chicken until browned on all sides. Remove chicken and set aside.
Step 4
Add remaining 2 tbsp butter to the pot. Sauté finely chopped onion until softened. Stir in crushed tomatoes, cook for 5 minutes, then add cooked chicken, heavy cream, and fenugreek leaves. Simmer for 15 minutes, allowing flavors to meld and sauce to thicken.
Step 5
Taste and adjust seasoning for the butter chicken sauce.
Step 6
To assemble, place a portion of hot french fries on a plate, top with a handful of cheese curds, and ladle generously with the hot butter chicken sauce. Garnish with fresh cilantro.
