Step 1
Heat 1 tbsp olive oil in a medium skillet over medium heat. Sauté diced onion for 3-4 minutes until softened. Add minced garlic, cumin, and chili powder; cook for 1 minute more until fragrant.
Step 2
Stir in the rinsed black beans, 1/4 cup of salsa, and 1/4 cup water (or broth). Simmer for 5-7 minutes, mashing some of the beans with a fork to thicken the mixture slightly. Season with salt and pepper.
Step 3
In a separate pan, heat 1 tbsp olive oil over medium-high heat. Fry the corn tortillas for 1-2 minutes per side until lightly crispy. Keep warm.
Step 4
In the same pan, fry the eggs to your desired doneness (traditionally sunny-side up). Season with salt and pepper.
Step 5
To assemble, place one fried tortilla on each plate. Top generously with the spicy black bean mixture.
Step 6
Place a fried egg on top of the beans. Drizzle with remaining salsa and garnish with sliced avocado and chopped cilantro if desired. Serve immediately.
