Step 1
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
Step 2
In a large bowl, whisk together lime juice, olive oil, minced garlic, fresh thyme, ground allspice, and minced Scotch bonnet (if using). Season with salt and black pepper to taste.

Add chicken cubes, bell peppers, red onion, and pineapple chunks to the marinade. Toss to coat evenly. Marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
