Step 1
Slice eggplants lengthwise into 0.25-inch thick slices, salt generously and let sit for 30 minutes

Pat eggplant slices dry with paper towels

Set up breading station with flour, beaten eggs, and breadcrumbs in separate bowls

Coat each eggplant slice in flour, then egg, then breadcrumbs

Heat oil to 350°F in large shallow pan

Fry eggplant slices in batches until golden, about 2 minutes per side, drain on paper towels

Spread thin layer of marinara sauce in 9x13 baking dish

Layer fried eggplant, then sauce, then mozzarella and Parmesan, repeat until all used

Top with final layer of mozzarella and Parmesan, plus fresh basil
