Step 1
Heat oil in a large wok or skillet over medium-high heat. Add garlic and onion, stir-fry until fragrant, about 1 minute.
Step 2
Add diced chicken and stir-fry until cooked through, about 3-4 minutes.

Push ingredients to one side, crack eggs into the empty space. Scramble until cooked, then mix with chicken.

Add cooked rice to the wok. Break up any clumps with your spatula. Stir-fry for 2-3 minutes.
Step 5
Pour in light soy sauce, fish sauce, sugar, and white pepper. Toss vigorously to combine all ingredients and seasonings.

Add carrots and frozen peas. Continue to stir-fry for 2-3 minutes until vegetables are tender-crisp.
Step 7
Stir in sliced spring onion. Serve hot.
