Step 1
In a large pot, add 8 cups of water and bring to a boil.
Step 2
Add chicken, onion, ginger, star anise, and cinnamon to the pot. Simmer for 20 minutes.
Step 3
Remove chicken, shred, and return to pot. Add fish sauce and rice noodles.
Step 4
Cook noodles until tender, about 5 minutes.
Step 5
Serve hot, garnished with cilantro, lime, green onions, bean sprouts, and chili.
