Step 1
Cut chicken breast into 1-inch pieces. Chop broccoli, slice carrots thinly, and dice red bell pepper. Mince garlic and grate ginger.
Step 2
In a small bowl, whisk together mole paste, chicken broth, soy sauce, and honey until smooth. This is your mole stir-fry sauce.
Step 3
Heat 1 tbsp vegetable oil in a large wok or skillet over high heat. Add chicken and stir-fry for 4-5 minutes until cooked through. Remove chicken and set aside.
Step 4
Add remaining 1 tbsp oil to the pan. Add broccoli and carrots, stir-fry for 3-4 minutes until slightly tender-crisp. Add red bell pepper, garlic, and ginger, stir-fry for another 2 minutes.
Step 5
Return chicken to the pan. Pour the mole stir-fry sauce over everything and toss to coat, cooking for 1-2 minutes until the sauce thickens slightly.
Step 6
Stir in cashews. Serve the mole chicken stir-fry immediately over cooked rice.
