Step 1
Remove casings from Italian sausage. Finely chop shallots, mince garlic, and thinly slice bird's eye chili (remove seeds for less heat).
Step 2
Heat 1 tbsp vegetable oil in a large wok or skillet over medium-high heat. Add Italian sausage and cook, breaking it up with a spoon, until browned and cooked through. Remove sausage and set aside.
Step 3
Add remaining 1 tbsp oil to the pan. Add shallots, garlic, and chili. Sauté until fragrant, about 2 minutes.
Step 4
Add day-old cooked rice to the pan, breaking up any clumps. Stir-fry for 3-5 minutes until heated through.
Step 5
Stir in Kecap Manis, soy sauce, and fish sauce. Return cooked sausage to the pan and toss to combine.
Step 6
Push rice to one side of the pan. Crack eggs into the empty space and scramble until just cooked. Mix into the rice.
Step 7
Chop green onions and slice cucumber. Serve Nasi Goreng immediately, garnished with green onions and cucumber slices.
